God is Organic

He is...organic ...not in the way I try to be,,,but in his plan for his church....He desires it to be pure, no artificial flavors. or added preservatives....He doesn't want fancy packaging, or catchy advertisements....His church is healthy, whole. It lives and breathes the purest form of nutrition...the life of Christ.....It knows no sickness or disease...The real church never need fear cancer....dead cells cannot survive in a body so alive.......God...is "green" perfected.

6 months into it, the journey continues.....and we remain "green". We've all had moments of weakness.... times where the desire to sip a white chocolate mocha from Starbucks, outweighs the desire to live to 100. ... Today was a good example of a slight clitch in the system. Cheesecake Factory..with my Mom, my sister and my adorable neice....Together we dined on potstickers, artichoke dip, avacodo eggrolls, buffalo wings, calamari, corn tomalita, quesadillas...and yes, cheesecake (confession is good for the soul)? Probably not the best choice I could have made, but it made me happy....and it made me happy to be sharing it with some of my favorite people in the world.....so my new name for the bad food I eat with people I love..."soul food".....yes, the organic foods I eat keep me physcially fit.....but soul food, is good for my heart.

I cheated today.....had sushi.....and you know what...it's ok. Remember reading about a time when Kings routinely made drinking a small portion of poison a daily event???..They did this so their bodies would create an immunity against it....so if the King were ever truly poisoned, he would be able to survive it....That's what cheating is to me...I allow myself a certain amount of "poison" so I know my body can fight any enemy it may come across. Let's face it...there are going to be times when eating organic will not be an option.. During those times, I want my body to be ok...therefore, occasionally....cheat....it does a body good.

The peanut butter and frito sandwich alternative....

As a kid, nothing tickled my taste buds quite like a peanut butter sandwich with a side of fritos...which inevitably ended up inside the sandwich....You know what I'm talking bout....Well, now that I'm "green" I was forced to find an alternative....and , I did.....Start with a sprouted whole wheat tortilla, slather freshly ground peanut butter on it ...and then, the secret ingredient...sprinkle organic, honey sesame sticks on top ( also great a top a salad)...and for those of you who live on the wild side, sprinkle some raisins on top of that.....roll it up...and it's party in your mouth! Try it.....you'll like it.

My new best Friend-cipe......
You read that right....friend-cipe......Defined, a recipe that I can call my friend. I remember 4 or 5 years ago, having to pull my betty crocker wedding gift recipe book out to remind myself how to correctly hard boil and egg. I love hard boiled eggs, but I am not to proud to tell you that I have always found them to be a challenge. The fear of over -cooking, under- cooking ,and don't even get me started on the peeling process......Anyway, you haven't lived until you've tried organic farm fresh, hard boiled eggs...They are a great snack, and a great way to start your day...and here's your tip.....Place the eggs in cold water, water level one inch over....bring to a boil, and boil for 3 minutes.......remove from heat....put lid on tightly and let them continue to cook for 20 minutes. Immediately run under cold water....and voila, the no nonsense ....easy peel. yummy snack....so easy, even I can do it right!

Great "sports" drink...2 tbls. per 8 ounces water and honey to taste ...This is a great way to start your day....Remember, half or body weight is the amount of water we need to be drinking a day...Fill your sports bottle in the morning, and the vinegar and honey....and see how good you feel.

In the Beginning....

Those who even slightly know me....can confirm that eating out is...was...what I did. I spent my whole adult life trying to come up with ways to get out of cooking. My Mother (and my inspiration) tried to encourage me by insisting that eventually I would embrace it, if for no other reason than to see my family happy and satisfied. Right....anytime now..... Well, I am happy to tell you that 20 years later, my Mom's words have finally come to pass.....Just goes to show you, Mom IS always right...Anyway.....about six weeks ago, I got my hands on a book titled The Natural Cure, and it struck a chord. The time had come.....and I knew it instantly Things were going to change. The eating world that we had known for over 20 years was about to change......end......and I was excited, really excited.
Despite what you might think...changing the way you eat begins by changing the way you think...The victory is in the mind....Having worked in a gym for over15 years I have seen and heard some crazy things...crazy good, and crazy bad.....Let's start with the crazy bad. I have a habit of comparing the human body to a car, because the analogy works so well....So let's say you are a car, a machine that runs on fuel, as does the human body. Let's call this car Lightening McQueen....LM pulls up to the gas station...he looks around as sees that gas has really gone up in price, plus the pumps are really slow, and he might have to pump it himself.....So instead, he pulls up to coke dispenser, and fills up....it soo delicious, and so much cheaper (and there's also the addiction element)...Now, LM is no dummy, and he knows he probably should have used fuel, but he'll make up for it....how? He'll hit the highway....twice even...run his engine as hard and fast as he can, to make up for the bad fuel choice.....if LM could do push-ups, he would.....This is the same mentality we as humans have...We fill our bodies with crap, send ourselves to the gym go as hard and fast as we can on non-fuel to make up for our bad choices. Not only are we not being productive, we are completely counter productive. Just like LM, we blow out engines, ruin pistons, and our transmissions are shot. We wonder why we don't lose weight, feel better, or have more energy...but there's really no mystery. It's simple....maybe too simple. Cars need gas...Humans need live, wholesome foods.
Ok ...enough of that....let's make it personal. In a fast food world, with busy schedules and hectic lifestyles, is it really possible to eat healthy...the answer is yes...yes and yes. The first thing I did, was rid....that is, get rid, of all the junk.....chips, little debbies, frozen chicken fingers, processed meats, soda, bread, cereals..It was all wrong. Before you label something "healthy', read the label...if there is even one ingredient you can't pronounce, it probably isn't, healthy that is...(That ingredient, the one you can't pronounce, is more than likely one of the reasons something isn't working the way you'd like).
Now my family has been really blessed with good health...as much as it is within my power, things will stay that way.
The second thing I did (after cleaning out and replacing) was check my families ph levels...All cancer patients have one common denominator, an acidic body....An acidic body is a progressive thing, It does not happen overnight, so monitoring ph is a great way to monitor health...Disease cannot thrive in a alkaline environment....so we all tested...the results weren't too bad, considering. Six weeks later, we continue to monitor, and the changes are amazing. I highly recommend monitoring your ph.....once you find where you're at, make the necessary changes in your diet. This is a great tool, and the kids are competitive about it.....imagine that!

The Green Mile...My Organic Journey

Greetings family and friends. Welcome to my journey-journal....Recently, I made the decision to "go green" and took my whole family with me. Oddly enough, they were all happy to join me. I had expected a little kicking and screaming from them (being that all five of my kids are teenagers) when I divorced them from french fries, golden arches, signs with the word Bell on them, and any form of a deep fried chicken part. Some might argue that it is best to make a transition like this slow, and methodical...but not us. We all dove in head first, no looking back....empty the pantry...out with the old, in with the new.
We are now six weeks into our "greeness", and I am so pleased.
The simplicity of eating organic is actually very freeing....The additional costs take a little getting used to, but it's worth the investment. Even though I am spending much...much more at the grocery store, I am spending absolutely nothing at the drive thru....so it all evens out.

The purpose of this blog is three-fold....one: to share our experience with healthy eating...the pros, and even the cons...two; to share helpful tips and ideas that I discover along my journey..( I have already learned some amazing things) ....third: to encourage.....Knowing and believing that the body is incredibly capable of healing itself is an amazing thing....Louis Pasteur said it best "the germ is nothing, the terrain is everything". We have the knowledge and the ability to make our bodies strong and disease resistant. Every tool we need to make this happen, God provided.
Once you make the decision to only put into your body what it needs for fuel, miracles begin to happen....and that's what this blog is all about.
